Ingredients
Dressing
- ¼ cup canola oil (60ml)
- 3 tbsp vinegar (45ml)
- 3 tbsp lemon juice (45ml)
- 2 cloves of garlic (minced) (6g)
- 2 tsp berbere (10ml)
Salad
- 4 large tomatoes (600g)
- 1 finely chopped onion (110g)
- 2 chopped and de-seeded jalapeño peppers (30g)
- 2 pieces of injera (torn into small pieces) (200g)
Instructions
- Combine the ingredients for the dressing and pour over the chopped vegetables (and injera, if you wish).
